Healthier Kid’s Mac and Cheese

Do I mix up a box of Annie’s Mac and Cheese for my boys from time to time? Of course I do! Any parent that denies the convenience and ease of such a quick and easy processed meal is kidding themselves. However, in actually less time, if I have leftover noodles in the refrigerator, I make a home made quick stove-top Mac and Cheese so gooey my boys will eat the entire pan. It’s preservative free, it’s low sodium not to mention easy.

Take 2 TBSP of Butter or Coconut Oil and melt it in a medium sauce pan

Whisk in 1/8 Cup Unbleached All Purpose Flour

Allow the Flour to cook for 30-60 seconds

While whisking, pour in 1 1/2 Cups of Whole Milk or Almond Milk

Whisk continuously until thickened to the consistency of a thick gravy

Add 1/2 tsp nutmeg, 1 tsp yellow mustard and 1 tsp salt

You can leave out cheese if making vegan, or for the gooeyness factor, add 1 Cup shredded Cheese of your choice. 

Toss in 2 Cups cooked pasta of choice and Voila! Enjoy
