Vegan Banana Bread

Ingredients

  • 3/4 Cup Coconut Oil
  • 1 1/2 Cups Sugar
  • 5 Large Mashed Super Ripe Bananas
  • 1 tsp Vanilla
  • 2 Cups Flour
  • 1 tsp Salt
  • 1 tsp Baking Soda
  • 1/2 Cup Unsweetened Apple Sauce
  • 1 tsp Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/2 tsp Ground Nutmeg
  • 1 TBSP Orange Zest (optional)

Directions

Preheat Oven to 350 Degrees F.
Line Standard bread-pan with parchment paper.
Melt Coconut Oil on stovetop or in microwave safe bowl.
Add Sugar and beat until combined.
Add Bananas and beat until creamy and smooth.
Mix in Vanilla, Cinnamon, Ginger, Nutmeg and Zest.
Sift Flour, Baking Soda, and Salt into mixture and beat to combine.
Mix in Apple Sauce and beat until smooth.
Pour batter into lined pan, and bake on center rack for 1Hr and 23Mins.
Lay pan on it’s side when done to allow to cool.
Store in sealed bag in refrigerator for up to 2 weeks.
