“Buddha woke up before dawn every morning and carried his bowl through the roads or paths wherever he was staying. Local people would place food in the bowl as a donation, and at the end he would eat whatever he had been given. So that was the original Buddha Bowl: a big bowl of whatever food villagers had available and could afford to share. It was probably pretty healthy, since Buddha lived before the age of cheap processed food, but it was also probably pretty simple, maybe rice and a simple curry.”
After an insane weekend of eating and drinking, nothing even remotely healthy, I needed something mindfully healthy and hearty. My body will be suffering for the next week I’m guessing; but this was a delicious start. Brown Basmati rice, spiced garbanzo beans, yellow zucchini, baby broccoli, mushrooms, peppers and arugula all topped with a beyond amazing coconut tahini sauce….if I do say so myself. Even the boys loved it! High five Mom!
I can happily retire to late night television and bed without a guilt in the world and the knowledge I will gradually feel better as the week goes on. Healthful Eating.
